What You Need:
- 2 C unbleached flour
- 1 C sugar
- 1 t baking powder
- 1 t baking soda
- 1 t cinnamon
- 1 t ginger
- 1/4 t ground cloves
- 1/4 t nutmeg
- 1/2 C pecans, chopped fine
- 1/2 t salt
- 2 lg. eggs
- 1/2 C canola oil
- 1 C unsweetened applesauce
- 1/4 C apple cider
How to Make It:
- Place the flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, nutmeg and salt in a large mixing bowl.
- Mix together.
- Add in the nuts.
- Stir to combine.
- In a separate bowl place the egg, oil, applesauce, and apple cider.
- Beat with an electric mixer until well blended.
- Add to the dry ingredients.
- Stir until completely moistened.
- Preheat oven to 350 degrees.
- Grease and flour a loaf pan.
- Pour the batter into the loaf pan.
- Bake 60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool completely before slicing.
