Ingredients:
1 ½ tbsp Drippings
4 med. peeled Potatoes ( ½ inch cubed)
1 med. size cooking Onion
1 10 ½ oz. can Cream of Mushroom soup
½ soup can of Evaporated Milk (I use Carnation)
Heat frying pan till fairly hot and put in Drippings. Heat until quite hot. Pour in cubed Potatoes and Onion, season with salt & pepper and cover. Turn over ingredients as they brown and cook until waxy. Then mix in Soup and Milk turning burner down to allow them to simmer. Heat and stir for a few minutes until Potatoes are thoroughly cooked. The end result will be creamy and so very good.
I sometimes add cut up mushrooms (a small tin or some fresh).
