BBQ Pork Ribs

Yield: 6 servings 
Preparation Time: 15 minutes 
Cooking Time: 30 minutes

Ingredients: 
- 2 pounds pork baby back ribs 
- 2 bay leaves 
- 4 garlic cloves, minced 
- 2 tablespoons Italian seasoning 
- Salt and freshly ground black pepper, to taste 
- 4 cups water 
- ½ cup sugar-free BBQ sauce 

Directions: 
1. In the pot of the Instant Pot, add all of the ingredients except the BBQ sauce and stir to combine. 
2. Secure the lid and place the pressure valve to the “Seal” position. 
3. Select “Manual” and cook under “High Pressure” for about 20 minutes. 
4. Select “Cancel” and carefully do a “Natural” release. 
5. Remove the lid and transfer the pork ribs onto a cutting board for about 5 minutes. 
6. With paper towels, pat dry the ribs completely. 
7. Transfer the ribs into a bowl. Add the BBQ sauce and coat the ribs with sauce generously. 
8. Cover and refrigerate for about 2-3 hours. 
9. Preheat the oven to broil. 
10. Broil the ribs for about 5 minutes per side. 
11. Serve immediately.
