RUSSIAN BORSCHT

Ingredients:

2 lb. Beef /or hamburger
2 qt. water
1 bunch beets
2 lb. red cabbage
1 lb. onion
1 (#2) can peeled tomatoes
1 can tomato paste
1 tbsp. vinegar or lemon juice
3 tbsp. sugar
Salt & pepper as desired
Cook Beef in boiling salted water for 1 hour. Remove scum as it forms.
If you use hamburger brown in a skillet.
Grate beets, cabbage and onion into soup. Add cut up tomatoes and tomato paste. When boiling, add vinegar or lemon juice. Add sugar and additional salt and pepper if needed. Cook an hour more.
Serves 4.
