Tapioca pudding

Servings: 2 Time: 10 minutes

Ingredients:

2 cups whole milk
½ teaspoon vanilla extract
¼ cup granulated sugar
2 tablespoons instant tapioca
1 egg

Instructions

1. In a medium saucepan, add in egg and milk and whisk till combined. Stir in tapioca and sugar and set aside. 

2. Turn heat to medium and bring to full boil. Take out from heat and add vanilla. Stir. 

3. Cover pudding surface with plastic wrap and cool for 10-15 minutes.
